The UGM Faculty of Animal Science (Animal Science UGM) continues to improve butchers’ competence in Yogyakarta.
Animal Science UGM held training sessions for butchers over two days, Thursday and Friday (Aug. 29-30). More than 30 butchers from 15 chicken slaughterhouses (RPA) and aqiqah providers attended the event.
“We warmly welcome your participation in this activity,” said the Dean of Animal Science UGM, Professor Budi Guntoro, on Friday (Aug. 30).
According to Professor Guntoro, following the government’s mandate, the goal is for micro and small food and beverage businesses (UMK) to be certified halal by October 2024.
He noted that there are still some issues related to the slaughtering process and post-slaughter handling.
“Halal and tayyib (clean and wholesome) also require knowledge. We hope that you become more aware and concerned with the process and post-slaughter aspects,” said Professor Guntoro.
Rusman from the Laboratory of Meat Science and Technology stated that this training aims not only to improve the competence of butchers at RPAs and aqiqah providers but also to increase consumer trust in carcass products that meet the standards of safe, healthy, intact, and halal (ASUH).
“We teach 10 Indonesian National Work Competency Standards (SKKNI). On the last day, there is also a practical chicken slaughtering session,” said Rusman, the Head of the Animal Product Technology Department.
The competence of butchers is based on SKKNI No. 147 of 2022.
The competency units include Applying Islamic Law, Coordinating Work, Occupational Health and Safety, Hygiene and Sanitation, Slaughter Equipment, Animal Physical Examination, Determining Animal Health for Slaughter, Animal Slaughter Techniques, Assessing the Slaughter Process, and Determining the Status of Animal Death.
Meanwhile, Ma’ruf from RPA Sakinah Kalasan said he gained a lot from the two-day slaughtering training.
“Usually, I only slaughter chickens, but here, I also learned about slaughtering goats,” said Ma’ruf.
