Utilizing Brown Seaweeds for Functional Food Industry

Research in recent years has shown that seaweeds have the potential to provide new bioactive compounds and substances needed for human nutrition and health.  Brown seaweeds (Phaeophyceae) have an abundance of specific nutrients and phytochemicals, including polysaccharides, polyphenols (phlorotannins), pigments (fucoxanthin), vitamins, and minerals.
