Beckham, Full Nutrient Ricebran Ice Cream Made by Students of Faculty of Agricultural Technology

Beckham, this name is certainly familiar, especially for football enthusiasts. However, this Beckham is not a football player who is now with the LA Galaxy in Major League Soccer in the United States.

Beckham is multivariant bran ice cream, a processed product innovation of bran. It was from the creativity of students of Faculty of Agricultural Technology UGM who are concerned about the availability of bran which is quite abundant, but less utilized. Bran, for some people is still regarded as something useless. Its utilization is only used as animal feed.

In the hands of Akhir Yuliana, Dyah Tri Wilujeng, Elok Pawening Maharani, Raehana Gahari Saria, and Sari Yuslia, bran which is previously not used is transformed into products that can be consumed and have economic value. "We are thrilled to utilize and process the bran which is quite abundant, but still less utilized. Mostly it is only used as poultry feed. In fact, the bran is rich in vitamin B, vitamin E, and oryzanol (antioxidant). In addition, the bran has a high fiber food, so it is good for digestion,”  Elok Pawening explained at UGM campus recently.

According to Elok, Beckham is an ice cream product that is rich in nutrition and safe to be consumed by people with lactose intolerance. The bran ice cream is rather different from other ice cream on the market. It is made from soy milk instead of cow's milk, combined with rice bran. "Here, we do not use cow's milk, but with vegetable ingredient, namely low-lactose milk soy. So, it is safe to be consumed by people with lactose intolerance," the student from class of 2009 said.

Beckham claimed as vegetable ice cream is not only because it uses soy milk in the making process, but also because it does not use eggs and butter. Butter is replaced with margarine. "This bran ice cream is indeed processed as vegetable ice cream which is targeted for vegetarians and people who are aware of the importance of consuming vegetables," she explained.

The ice cream making is same as the making other ice cream. To make a recipe of Beckham, use 40 grams of bran, 800 ml liter of soy milk, 150 grams of sugar, and flavor. One recipe can produce approximately 18-20 cups in 90 ml size. "Within a month we usually get 4 times of production. In one production, we use 240-300 grams of rice bran. The brans used are the fresh ones," Sari Yuslia added.

In one week they are able to sell up to 90 cups of ice cream. One cup of Beckham is 3,000 rupiah. For a while, Beckham is just marketed limitedly, namely in Cafeteria of Faculty of Agricultural Technology, Soma Yoga Restaurant and Vihara Boedhi Cita. The flavors are quite varied from chocolate, coffee, ginger and palm sugar. Want to try?
